Step 1
Preheat the oven to 120°C
Step 2
Season the steaks with salt, fresh-cracked black pepper, a tsp of fennel seeds and 1 tsp of oregano and lay in a roasting tin
Step 3
Sweat the onion in a little olive oil and add the garlic and fry for another 2 minutes.
Step 4
Add the tomatoes, then and peppers and bring to a simmer
Step 5
Season with more fennel, oregano salt and pepper. Add a beef stock pot for richness and half a cup of red wine. Simmer for 10 minutes
Step 6
Pour the hot sauce over the cold meat, lay a sprig of fresh rosemary to each steak and cover with foil. Roast for about 2 hours until the meat falls apart
Step 7
Can be served with rosemary roast potatoes and a lightly seasoned salad, the sauce can be used on pasta with some Parmesan
