Instructions
Step 1
Preheat oven to 450 degrees
Step 2
Add beer, broth, garlic, onion wedges to bottom of large roasting pan
Step 3
Rub olive oil over roast
Step 4
Add seasonings to all areas of roast and place fat side up in roasting pan
Step 5
Bake on 450 for 45 minutes
Step 6
Remove roast and lower oven to 250 degrees. Pour liquid from pan over top of roast and return to oven
Step 7
Cook on 250 for 8-9 hours. Remove roast hourly to pour brine mixture over top of roast.
Step 8
Remove from oven and let sit for 20 minutes
Step 9
Remove top layer of fat before carving/shredding the roast. Remove onions from pan. Remove and excess fatty pieces from roast.
Step 10
Mix carved/shredded roast with pan liquids and place back in oven for additional 15 minutes. Remove roast, lightly season the top of pork, and serve
