Orzo Salad with Lemon Herb Dressing
Yesterday’s sunny and warm day called for a rainbow salad: Little gem lettuce with radishes, avocado, fennel, blood orange, cherry tomatoes, red onion, chickpea “orzo/rice” (@eatbanza), and sunflower seeds tossed in breadcrumbs and an herby lemon dressing

Ingredients

1 tspshallots

1 tspdijon mustard
1 tablespoonparsley
chopped
½ tspdried oregano
2 tablespoonsapple cider vinegar
1 tablespoonolive oil
1juice of lemon
½ tsphot honey
I used @mikeshothoney but you can use regular honey with a pinch of crushed red pepper, omit if vegan

or Banza Rice

Instructions
Step 1
Make the dressing: Whisk or mix shallots, mustard, parsley, oregano, apple cider vinegar, olive oil, lemon juice, and hot honey together. Add salt and pepper to taste.
Step 2
Cook the Orzo or Banza Rice, drain.
Step 3
Prepare the Salad: Slice/chop/dice the salad ingredients - radish, avocado, fennel, orange, tomatoes, red onion.
Step 4
Assemble the Salad: Mix all the ingredients together with lemon dressing to taste.
