The BEST fish sauce (nuoc mam) recipe

There’s no special or unique ingredient in this recipe but what makes this so different from the restaurant version is the way my mom makes it. It’s on the sweeter side, but it’s more spicy and anyone who has tried it can vouch it’s the best fish sauce they’ve had! I use this on everything! This recipe is enough to make about 3 cups of sauce that you can store in the refrigerator. Make sure to use a clean spoon to serve so it doesn’t spoil. We like our sauce on the sweet side, if you don’t, simply adjust by using less sugar and more lime and/or fish sauce. Just taste and adjust.

Instructions

Step 1
Add sugar into a heat proof bowl and pour in the hot water. Set it aside and let it cool. In the meantime, cut up some chilis and garlic and toss it into a food processor with 2 tbsp of the sugar/water mix. This helps it blend smoother. Blend this until it’s a chunky paste. Squeeze 1/2 cup of lime juice and pour this into the chili mixture to get all of it out of the food processor, you don’t want to waste any of it. Pour this into the cooled sugar/water mixture and then add the fish sauce.
