Greek Gigante Beans

Gigante beans are a crowd favorites, but almost any bean will be delicious this way. Smaller white beans, like cannellini, will cook more quickly.

Ingredients
5 servings
1 pounddry gigantes beans
soaked overnight
2yellow onions
medium, peeled and chopped
4 clovesgarlic
peeled, and smashed
2 x 14.5 ouncecans no-salt-added diced tomatoes
2 cupsvegetarian chicken broth
or water
2bay leaves
1 teaspoondried oregano
½ teaspoondried thyme
¼ teaspoonred pepper flakes
1 teaspoonsalt
1 teaspoonsugar
2 tablespoonsextra virgin olive oil
Black pepper
olive oil
for serving
Instructions
Step 1
Boil the beans for 10 minutes.
Step 2
Place all of the ingredients in the bowl of a large slow cooker. Cook for 4-6 hours on high, or 8-10 hours on low. Taste and add more salt as needed.
Step 3
Serve with toasted crusty bread. Garnish with freshly ground black pepper and a drizzle of olive oil.
