This recipe has some history for me. By that I mean I don’t really like tuna melts. And by THAT I mean I don’t like MOST tuna melts. I think it’s more the idea of the words tuna melt. Just the name makes me feel funny. So this recipe was developed for two reasons: to create a tuna melt that I would enjoy with gusto, and to satisfy an incessant request for this sandwich from one of my favorite roommates, Allison. So this one’s for you.

140gwhite tuna packed in olive oil
can, solid, drained
¼ cupmayonnaise
10gDijon mustard
0.5celery
medium rib
0.5shallot
1 sprigdill
1dill pickle
fi nely cho
35gunsalted butter
such as brioche or grocery store white bread Gouda, optional, for ga
2 slicescountry bread
thick-cut
4 slicesSwiss cheese
chives
Thinly sliced
kosher salt
black pepper
freshly cracked, to taste
Instructions
Step 1
In a medium bowl, shred the tuna with a fork until as fi ne as possible. Add the mayonnaise, mustard, celery, shallot, dill, and pickle. Season to taste with salt and pepper, and mix until thoroughly combined. 2 In a 10-inch (25-cm) pan, heat the butter over medium heat until melted and bubbling. Add the slices of bread and toast for 2 to 3 minutes, or until deep golden brown on the bottom. Flip and toast the other side until deep golden brown.
3 Top each slice of toasted bread with half of the tuna mixture, and then layer 2 slices of cheese on each piece. Either place on a baking sheet and broil on high, or use a blow torch to melt the cheese completely. Top with thinly sliced chives (if using). Close the sandwich, slice on the diagonal, and enjoy
