Ingredients
1 servings
1.5firm tofu
palm size and thickness of
Almond milk
to coat the tofu
Flaxseed
to cover Black pepper
1wholemeal flatbread
1radish
sliced thinly
3 ribbonscucumber
I use a potato peeler to slice
salad leaves
Katsu Curry Sauce
½ teaspoonfresh ginger
1 clovegarlic
crushed
0.5red onion
finely chopped
1 teaspooncoconut oil
½ teaspoongaram masala
½ teaspoonmild curry powder
100mlwater
lemon juice
1 heaped teaspoonGreek yoghurt
Instructions
Step 1
Dip the tofu in the almond milk to cover and then coat with the flaxseed.
Step 2
Season generously with black pepper and place on a baking tray and cook on 180°C for 20-25 minutes turning halfway through.
Step 3
Meanwhile prepare your katsu sauce.
Step 4
In in a small pan fry the ginger, garlic and onion in the coconut oil on a low heat for 5 minutes.
Step 5
Add the garam masala and curry powder and stir.
Step 6
Now add the 100ml water, stir and bring to the boil.
Step 7
Add a tiny squeeze of lemon juice then add the Greek yoghurt.
Step 8
Transfer the mix to a blender and blitz into a sauce for 1 minute.
Step 9
When everything is ready, load your flatbread with the tofu burger, the salad ingredients and drizzle over your katsu sauce.
