Instructions
Step 1
In a medium saucepan, on low heat, add olive oil and butter, sauté onion, garlic, and bay leaf for 3 minutes, stirring frequently so the garlic doesn't burn.
Step 2
Add the sweet pepper and fry for 2 min then add tomato paste and let fry gently for 30 seconds.
Step 3
Add rice, tomatoes, coriander, or parsley stalks very finely chopped, , vinegar, piri piri and the stock or water. Stir, increase heat to medium. Season with salt and pepper to taste.
Step 4
Let the rice simmer with a lid, but vented so that steam can escape, for 20-25 minutes, stirring every now and then. Test for doneness at around 20 minutes.
Step 5
After the rice is cooked, discard bay leaf and add chopped coriander leaves, and serve immediately.
