Instructions
Step 1
Medium dice the red onion
Step 2
Slice the garlic cloves
Step 3
Heat a dutch oven over medium high and add olive oil and preheat
Step 4
Once preheated, saute the onions 3-4 minutes then add in garlic cloves and chili flakes and let bloom for about 30 seconds.
Step 5
Add calabrian chiles if using.
Step 6
Add tomato paste and start blooming it
Step 7
Deglaze pot with vodka
Step 8
Add heavy cream and bring to a simmer. Cook for 4-5 minutes.
Step 9
Add salt to taste, about 1 tsp.
Step 10
Bring about 4 quarts of water to a boil to cook pasta. Add 2-3 Tb salt to water.
Step 11
Once water comes to a boil, drop the pasta in.
Step 12
While pasta cooks, heat up a large sauce pan and add about 1 cup of the pasta water and 1/2 of sauce and bring to a simmer.
Step 13
Drain pasta when done saving 1 cup of the paster water, and add the pasta to the sauce in the pan. Add butter and let soften a bit then toss to emulsify.
Step 14
Add additional 1/2 cup water and toss.
Step 15
Add parmesan cheese and basil and toss.
