Chicken and Aubergine Stew Slow Cooker (Mine)

Instructions

Step 1
At least an hour before cooking (middle more) mix 2 tbsp oil and 2 tbsp Chicken Seasoning in a bag and then put in chicken thighs to coat.
Step 2
Chop aubergine (sprinkled with salt and lightly coated in 1 tbs oil) and onions and carrot, and sautee until soft and light brown, set aside
Step 3
Brown the chicken thighs on the outside.
Step 4
Chop up the black olives (into halves or smaller)
Step 5
Combine all the ingredients (incl. the olives, various tomatoes and 2 tbps mixed herbs) except the stock in the slow cooker.
Step 6
Add the stock to hot water (volume on pack) and pour in.
Step 7
Cook on high for 4 hours.
Step 8
Before serving you can pull the chicken off the bones really easily. Can freeze.
