Diablo Meat Sauce

This is my spicy pasta sauce. Great to simmer all day and load onto a hearty bowl of pasta.

1onion

1orange bell pepper
diced and seeded

sliced thinly
6 clovesgarlic

2 Tbspdried basil
or /4 cup fresh
1 Tbspdried oregano
/ cup fresh
1 tspgarlic powder
½ tsponion powder
1 tspcrushed red pepper
2bay leafs

28 ozcrushed tomatoes
can
1 x 28 oztomato sauce
can
1 x 12 oztomato paste
can
½ cupcooking wine
¼ cupolive oil

Instructions
Step 1
1. In large pan or Dutch oven heat 2 tbsp of olive oil on medium-high
Step 2
2. Remove casing from sausage and crumble and brown. When half browned add beef and onion. Completely brown.
Step 3
3. Drain most or all fat and add onion, jalapeño, bell pepper and garlic. Cook for 5-10 minutes until onion translucent and peppers softening.

4. Add salt, pepper, basil, oregano, garlic and onion powder, crushed red pepper and stir until blended.

5. Add crushed tomatoes, tomato sauce, tomato paste, wine, olive oil.
Step 6
6. Bring sauce to bubble then reduce heat to medium low and simmer for 1 1/2-2 hours or as long as you have. The longer it simmer, the more the flavors build.

7. After one hour, taste sauce and adjust seasonings as you see fit.

8. If you desire a thicker sauce, near the end add a handful of mozzarella or Parmesan until sauce thickens.
Step 9
9. Remove bay leaf and serve with your favorite pasta, preferably one that soaks up the saucy goodness.
Step 10
10. If you prefer a hotter sauce substitute Serrano for jalapeño or add 2-3 on top. For a real pop of heat, cut a slice on two sides of two habaneros and add whole when mixing in the sauces. Remove with bay leaf.
