Pumpkin Cauliflower Rice

This is a remake of one of an all time favorite Jamaican one pot meals, pumpkin rice. Pumpkin rice is one of the many types of seasoned rice. It’s traditionally a midweek dish made when you don’t have time or don’t have much and need a quick meal. It pairs very well with the steamed cabbage.

Instructions
Step 1
HEAT up oil in a skillet over medium heat. ⠀⠀
Step 2
ADD onions, bell pepper and green onion. ⠀
Step 3
SAUTÉ until onions begin to turn translucent. ⠀
Step 4
ADD pumpkin, salt, black pepper, thyme, ground allspice and stir. ⠀
Step 5
ADD broth, stir and cover for 7 minutes. Reduce to just between medium and medium low heat.⠀
Step 6
STIR every 3 minutes to prevent burning.⠀
Step 7
INCREASE heat to high. ⠀
Step 8
ADD frozen cauliflower rice, garlic and stir. ⠀
Step 9
ONCE the cauliflower rice is heated through it’s ready to serve!⠀
Step 10
Note: if you can’t find kabocha squash you can use acorn or butternut squash.
