Instructions

Step 1
Start with heating a heavy bottom pan on medium heat.
Step 2
Finely mince the onion, garlic and ginger.
Step 3
Pour oil in to coat the bottom of the pan, and add your onion, garlic and ginger. Allow this to brown for about 3 to 5 minutes.
Step 4
Then add in all your spices. In order to not burn any spices, make sure there is enough oil to immediately coat them.
Step 5
Mix the spices for about 30 to 60 seconds before adding the coconut milk, tomato puree, green lentils, water, and almond butter. Stir to combine everything and let it come to a boil.
Step 6
Then lower the heat to the lowest setting, cover with a lid, and let cook for about 45 minutes.
Step 7
In the meantime, I boiled my rice and cut the green onions for the garnish. Keep in mind that the curry will be extremely hot, so be careful! Enjoy!
