Instructions

Step 1
Get chicken and cut into 1 inch cubes.
Step 2
In a large bowl, mix salt, pepper, cornstarch and flour. Mix until incorporated.
Step 3
Add water, egg, and oil to mixture. Mix until incorporated.
Step 4
Add chicken to batter and mix until all the chicken is covered in the batter. Cover bowl with plastic wrap and cover for 30 minutes (at least).
Step 5
Once chicken is done sitting, put enough oil in a pot for the chicken to be covered and be allowed to rise. But on medium high heat.
Step 6
Drop little bit of batter into oil and make sure it begins to fry. If not let rest longer. If it fries, begin to drop chicken pieces in oil. DO NOT OVER CROWD THE OIL.
Step 7
Fry chicken pieces until golden brown. Take out of the oil and place onto a cooling rack or into a colander. Continue until all chicken has been fried.

For the Sauce

Step 8
In a large sauce pan, add veggie oil, chili flakes, ginger, and garlic. Cook for 30 seconds until fragrant.
Step 9
Add white sugar, brown sugar, and orange juice. Cook until mixture comes to a boil, then add vinegar. DO NOT ADD UNTIL MIXTURE COMES TO A BOIL.
Step 10
Bring mixture to a boil again and add soy sauce. Meanwhile, in a small bowl add water and cornstarch together and mix until cornstarch is completely dissolved. Once sauce is boiling, slowly add cornstarch mixture to sauce and mix until incorporated.
Step 11
Sauce should resemble maple syrup.
Step 12
Add chicken to sauce and mix until chicken pieces are fully covered in sauce. Add sesame oil and mix chicken again for the oil to coat the chicken.

Serve and enjoy.
