Instructions
Step 1
Heat the oil in a large pan and add the onions. Fry the onions for 4 minutes.
Step 2
Add the ground cinnamon and ginger to the onions, stir together. Turn down the heat and fry for a further 2 minutes.
Step 3
Add the chopped apples to the pan and stir until all the ingredients are well combined. Cook for 1 minute.
Step 4
Add the black eyed beans to the pan along with the water in the can. Stir together and put a lid on the pan.
Step 5
Leave the pan on a low heat for around 20 minutes, stirring the contents occasionally to ensure it doesn't stick to the pan.
Step 6
When the apples are all soft, the dish is ready to serve with pitta or other flat bread and yogurt, if liked.
