Instructions
Step 1
Spray 8x8x2 baking dish with cooking spray.
Step 2
In 3 quart saucepan, place raw sweet potatoes and water to cover. Heat to boiling. Reduce heat and simmer 25-30 minutes until tender.
Step 3
Drain potatoes and cool slightly.
Step 4
Peel and cut into large chunks, and place in prepard dish.
Step 5
Preheat oven to 350.
Step 6
In a small saucepan, melt buter, stir in syrup and sugar substitute.
Step 7
Cook over low heat, stirring every 3-5 minutes until blended.
Step 8
Sprinkle nuts over sweet potatoes, then top with syrup mixture.
Step 9
Bake for 30 minutes
