Ingredients

Cookie
126 gramsoat flour
126 gramspowdered sugar
¼ tspcream of tartar
100 gramsegg whites
room temperature
90 gramssugar
Filling
Instructions
Step 1
Sift together oat flour and powdered sugar in a medium sided bowl.
Step 2
Whip egg whites on high until foamy. Add in cream of tartar.
Step 3
Very slowly add in sugar. It will resemble meringue when you’re done.
Step 4
Fold eggs gently into the flour mixture.
Step 5
On a macaron mat or plain parchment, pipe the cookies. They don’t have to be perfect, just try to keep them all the same size.
Step 6
Let rest at room temperature for 30 minutes before baking.
Step 7
Preheat oven to 300.
Step 8
Bake for 15 minutes.
Step 9
Wait until cookies are fully cooled to remove from tray.
Step 10
Find pairs that resemble the same shape and size to create your cookie.
Filling
Step 11
Mix all ingredients on high in a stand mixer for 2 minutes. Fill a piping bag or ziploc to fill.
