Instructions
Step 1
Rinse the lentils in cold water and drain. Place them in a pot with 2 cups of water and bring to a boil. Reduce heat to low and simmer for about 20-25 minutes or until the lentils are tender but still hold their shape. Drain any excess water and let the lentils cool to room temperature.
Step 2
In a large bowl, combine the cooled lentils, chopped red onion, tomatoes, cucumber, and green bell pepper. Toss well.
Step 3
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the lentil mixture and toss well to coat.
Step 4
Add the chopped parsley and mint to the salad and toss again to combine.
Step 5
Taste the salad and adjust the seasoning if necessary. Top with pomegranate and pumpkin seeds. Serve chilled or at room temperature.
