Uncle Tony's Chicken Noodle Soup

A spicy Italian version of the OG chicken noodle soup passed down from my great uncle. The bit of cayenne pepper in it really helps get that nose running and help decongest you.

Instructions

Step 1
Combine the water, oil, and salt in a large pot over high heat. Get it boiling.
Step 2
While waiting for the water, cut up your chicken, carrots, celery, and onion. I tend to cut a little less then 1/2 inch cubes for my chicken and I finely chop the veggies.
Step 3
Once the water is boiling, add everything, but the noodles! Adjust the cayenne pepper to your taste. 1 tsp is perfect for me, but it really gets my husband's nose running. Start with 1/2 tsp if you are sensitive to heat. Let everything cook until veggies are tender and chicken is cooked through. This should be about 30 minutes. Add in the noodles and let simmer for another 10 minutes. Enjoy!
