0.5kglamb shank boneless
cut into chunks
0.25kgground beef
1 cuplong grain rice
3 cupswater
1onion
medium, peeled for meat boiling
1onion
small, peeled and diced, for Ouzi rice
4 tablespoonsoil
1cinnamon stick
3cardamom pods
3bay leaves
1 teaspooncinnamon
½ cuproasted almonds
halved
½ cuproasted pine nuts
1 teaspoonsalt
1 teaspoonseven spices
Gravy ingredients
Instructions
Step 1
Over medium heat, in a pot put two tablespoons of oil, then add the lamb chunks, and sear it all around until nicely browned.
Step 2
Transfer to large saucepan, cook over medium to high heat, (spoon the scum out as it appears) Once it reaches a boiling point, add the cinnamon stick, cardamom pods, and bay leaves, reduce the heat to low, cover the pot and simmer for 2 hours.
Step 3
Take the meat off the heat and keep it warm, strain the broth and set aside.
Step 4
To prepare the Ouzi Rice, in a saucepan on a medium heat, put 2 tablespoons of oil, then add the ground beef and cook stirring until it changes color 10 to 12 minutes, remove from the pan and set it aside.
Step 5
Place oil and onions in same pan and cook until wilted, add the rice and stir all together, then add the ground beef, salt, seven spices, cinnamon and 2 cups meat broth, and cook on low heat for about 40 minutes.
Step 6
To Prepare the gravy, on a medium heat, in a small saucepan add the butter, then add flour and stir constantly.
Step 7
Take 1 cup of the beef broth and add it to the butter and flour mixture, then add pinch of salt, all spice and cinnamon.
Step 8
Stir the gravy on a low heat until it boils, then take it off the stove and pour it in a saucer ready to serve.
Step 9
Put the rice in a serving dish, then put the lamb cubes on top and garnish with nuts.
Step 10
Serve chunks of lamb over ouzi rice. Top with roasted nuts, and serve with gravy aside.
