Spicy Garlic & Tomato Pickle

This sounds like a lot of tomatoes but it reduces down hugely. When I make it I use 4 x the recipe to make roughly 4- 5 jars to store. Goes welk with cold fish, meats & cheeses.

Instructions

Step 1
Put all the ingredients in a large pan & bring slowly to the boil, stirring occasionally. Reduce the heat & simmer for up to 1 hour or until the mixture is very thick. Leave to cool to room temperature before serving. Leave in the fridge for up to 2 days before using for the best flavour. Or while still hot, put in to sterilised jars & seal if you want to store it longer.
