Instructions

Prep the Zucchini

Step 1
Slice zucchini into four long strips each and line them up on a baking tray.
Step 2
Sprinkle olive oil and salt over zucchini strips. Rub in.
Step 3
Bake at 400 F for 15 minutes or until flexible. Pat dry with paper towel when finished.
Step 4
While zucchini is baking, prepare the fillings. Mix ingredients for cheese filling together.
Step 5
Lightly coat the bottom of a casserole dish with marinara sauce.
Step 6
Brown ground beef in pan with Italian beef ingredients.
Step 7
Place a spoonful of cheese filling on the end of each zucchini strip and roll up. Place each vertically in the casserole dish.
Step 8
Once all zucchini roll-ups are prepared in the casserole dish, pour over the Italian beef. Then, coat with marinara sauce and sprinkle parmesan cheese crumbles on top.
Step 9
Bake at 400 F for 20 minutes.
