Instructions
Step 1
Sauté the onion, then add the remaining veggies except the carrot.
Step 2
Add the thyme and pour the wine. Wait until the alcohol is evaporated.
Step 3
Add the orzo and mix until golden.
Step 4
Slowly start adding the boiling broth. Wait until the orzo absorbs most liquids before adding again. Try and mix as few times as possible so as not to damage the orzo.
Step 5
Once the orzo is al dente, add the spices, the grated carrot, the cheese and the butter and mix a little.
Step 6
Your dish is ready when the orzotto looks like a pasta and falls off the spoon.
Step 7
Sprinkle with truffle oil, sesame and oregano if you want.
