This is a simple and cheap recipe ideal for when money is tight. Its based on an Italian dish which uses Parmesan cheese instead of Cheddar cheese. It has the taste of a Tomato & Cheese Potato Pizza. Great for all the family and kids will love it. Serve as a stand alone dish or with meat and vegetables.

Place 2 tins chopped Tomatoes in a bowl and add the garlic paste Worcester sauce salt and black pepper. Mix well and set aside.

Layering the pot

Grease the bottom and side of the pot with the oil. Place all the onions in the bottom and spread out evenly. Then add a layer of potatoes and season with salt and black pepper. Then ladle over some of the chopped Tomatoes. Next add a sprinkling of cheddar cheese. Continue the process until you have used up the potatoes and chopped tomatoes. Add the mixed herbs to the last layer of chopped tomatoes.

Cooking

Cook for 6 hours on high until the potatoes are soft, leave the cover off for the last 30 minutes to allow some of the moisture to evaporate. You can extend cooking time by choosing a different setting just make sure potatoes are soft.
