Instructions
Step 1
Preheat oven to 180C
Step 2
Separate egg yolks from egg white.
Step 3
In a food processor combine egg yolks with spinach, black pepper and nutmeg and blend until smooth
Step 4
In a large bowl whisk the egg white with salt until stiff peaks form
Step 5
Add spinach mixture to the egg whites and carefully mix until combined, using a spatula. Then add flour and mix well again.
Step 6
Transfer to the baking tray, lined with parchment and bake for 10 minutes at 180C
Step 7
When ready, let it cool, then tip it upside down and remove the parchment.
Step 8
Spread the cream cheese, mixed with lemon juice on a cooled base.
Step 9
Then place salmon slices on top of the cream cheese. Leave a few cm free on one of the long edges, then roll tightly together from the opposite side of the free edge.
Step 10
Wrap the roll in a cling film and let it cool in the fridge for 2 hours minimum.
Step 11
Remove the cling film and slice the roll before serving. Enjoy!
