Instructions
Step 1
Add lentils + 4x their volume of water, along with the tumeric, salt, 1/3 of the garlic and ginger, and 1.5 tbsp oil
Step 2
Heat over medium heat, and add the tomato, chillies, bay leaves, and half the onion; and cook for 12 minutes
Step 3
Once thick, reduce the heat, and add oil/butter to a separate pan
Step 4
Add the onions and mustard seeds over a high heat to caramelise the onion, adding the ginger and garlic (2:3) part way through
Step 5
Add the tarka to the lentils, deglazing the tarka pan with lentil water, and reduce to desired thickness
