Instructions
Step 1
Dry all sides of the thawed tilapia with a paper towel and season well with salt and set aside while you prepare the rest.
Step 2
Preheat oven or air fryer to 350 F
Step 3
In a blender or food processor grind up the pork rinds until they are a panko like consistency.
Step 4
In a shallow pan combine the ground pork rinds, Parmesan, garlic, paprika, and pepper.
Step 5
In another shallow dish combine the egg and milk and salt and whisk together with a fork.
Step 6
Place each fillet one at a time in the egg mixture, being sure to coat both sides, and then in the dry mixture, flipping and pressing the fillet in to make sure the coating sticks.
Step 7
Next place the fillets on a sprayed fryer basket or sheet pan, lightly spray the tops with cooking spray and Air Fry: 8-10 minutes flipping half way through or Oven Bake: 10-15 minutes. Until the outside is golden brown and crispy. When done the fish should flake apart with a fork.
Step 8
Top with a squeeze of lemon and serve.
