The Best Yellow Rice

Super adaptable side dish. Keep it plain if you're serving it with something like chilli or curry, adapt and add what you fancy if you're serving it as a side for a BBQ etc. Fry off peppers and onions with some mushrooms at the start if you want to add veg, or throw in peas/carrots. Try Cajun spices with jalapenos and black beans, try cumin with jalapenos and onion for a Mexican style, or throw in cinnamon with cardamom and raisins for an Indian style rice.

Instructions

Step 1
Melt the butter in a pan and add rice, gently stir until it starts to brown and begins to smell almost nutty.
Step 2
Add garlic, onion and turmeric and stir well.
Step 3
Slowly stir in the stock then raise the heat to medium-high.
Step 4
Add salt and pepper to taste and bring to the boil.
Step 5
Turn the heat down to the lowest setting, cover the pan and simmer for 20-25 minutes.
Step 6
Remove from the heat, add coriander and fluff with a fork. The bottom will have gone slightly crisp, don't panic! This is the best bit!!
