16 ozkidney beans

2 ½ cupsvegetable broth

Instructions
Step 1
In one big pot sauté onion, bell pepper of choice, and carrots with olive oil for 8-10 min
Step 2
Afterwards add minced garlic, paprika, chili powder, and cumin and mix for a minute
Step 3
Add tomatoes, can use canned but fresh is better, and jalapeño pepper (or red pepper flakes) and mix
Step 4
Add 2 1/2-3 cups vegetable broth and black beans, kidney beans, corn, and fresh chopped potatoes. Add salt and pepper and stir well
Step 5
Bring to a boil and then bring down to a simmer for 40 minutes
Step 6
If chili is too runny, take about 2 or 3 cups of it and blend and add back in and stir
Step 7
Serve with cheese and sour cream
