Instructions
Step 1
Combine potatoes and 1 tablespoon oil in bowl, cover, and microwave, stirring occasionally, until potatoes are almost tender, about 10 minutes; transfer to 5 1/2- to 7-quart slow cooker.
Step 2
Season roast with coriander, fennel, salt, and pepper and nestle, fat side up, into slow cooker.
Step 3
Cover and cook until pork is tender and registers 140 degrees, 3 1/2 to 4 1/2 hours on low.
Step 4
Transfer roast to carving board, tent with aluminum foil, and let rest for 15 minutes.
Step 5
Whisk remaining 3 tablespoons oil, shallots, parsley, vinegar, mustard, and 1/2 teaspoon salt together in large bowl.
Step 6
Using slotted spoon, transfer potatoes to bowl with dressing and toss to combine; discard cooking liquid.
Step 7
season with salt and pepper to taste.
Step 8
Slice meat into 14-inch- thick slices.
Step 9
Serve with potato salad.
