Instructions

Step 1
Crack egg into bottom of tall wide mouth glass jar (wide enough for stick blender to fit)
Step 2
Add Dijon Mustard, apple cider vinegar, & salt, trying not to disturb the egg. Do not whisk or stir.
Step 3
Pour avocado oil on top. Again, do not whisk or stir.
Step 4
Carefully submerge stick blender into the bottom of the jar, so that it's right on top of the egg. Blend on low power for ~20 seconds without moving, until you see that most of the jar has turned white. Then, slowly move the blender upward, without lifting the blender out of the jar. Once you reach the top of the oil, slowly move back down to the bottom. Go up and down like this a few times, until mayonnaise forms.
Step 5
Store mayonnaise right in the jar in the refrigerator.
