G - Bacon Cheeseburger, Garlic Butter Fries & Truffle Mayo

Nothing beats a cheeseburger, except one topped with crispy bacon and mouth-watering onion marmalade. Serve with a dollop of truffle mayonnaise and garlic butter fries. Burger-licious!

Instructions

Step 1
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7 Cut the potatoes (skins on) into thin chips
Step 2
Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper
Step 3
Give everything a good mix up and put the tray in the oven for an initial 25-30 min or until golden and crisp
Step 4
While the chips are cooking, add the beef mince to a bowl with the panko breadcrumbs and a pinch of pepper
Step 5
Give everything a good mix up until fully combined (clean hands is the best way!) then shape into equal sized patties
Step 6
Add the burger patties to an oiled baking tray with the smoked streaky bacon
Step 7
Put the tray in the oven for 12-15 min or until the burgers are cooked through and the bacon is crispy

Meanwhile, peel and finely chop (or grate) the garlic cloves
Step 9
Chop the parsley roughly (including the stems)
Step 10
Chop a large knob of butter into small cubes
Step 11
Peel the Italian hard cheese with a peeler until you end up with a pile of cheese shavings

Once the chips are golden, remove them from the oven and push to one side of the tray
Step 13
Add the chopped butter, garlic and parsley to the chips and gently toss everything together – these are your garlic butter fries
Step 14
Add the brioche buns to the other side of the tray
Step 15
Return the tray to the oven for 2-3 mins or until the butter has melted and the brioche is warmed through

Once the burgers are cooked through, remove the tray from the oven and top each patty with the Italian hard cheese shavings

Return to the oven for 2-3 min until the cheese has melted

Tip: If your bacon is already crispy at this point, add it to a plate and set aside

Roughly chop the tomato
Step 20
Wash the rocket, then pat it dry with kitchen paper

Reserve a handful of rocket and dress the remaining rocket and the chopped tomato with a drizzle of olive oil and the balsamic vinegar

Add the truffle oil to a bowl along with mayo and a generous grind of black pepper and mix it all together – this is your truffle mayo

Spread each brioche base with a dollop of onion marmalade
Step 24
Add the cheesy beef patties followed by the crispy bacon, a spoonful of truffle mayo and top with the reserved rocket
Step 25
Serve the dressed salad and garlic butter fries to the side with any remaining truffle mayo. Enjoy!
