Step 1
Sauté spinach in oil on low heat until decreased in size. Move to a side of the pen.
Step 2
Add cut mushrooms to the pen, beside the spinach and sauté until also decrease in side.
Step 3
Add some salt and pepper to spinach and mushrooms for taste.
Step 4
Move mushrooms to the side towards the spinach and add sweet pepper to the pen (sweet pepper is cut into small pieces). Continue sauté on low heat for a few min.
Step 5
While veggies are cooking, whisk the eggs until smooth. Add milk and a pinch of salt. Whisk until smooth.
Step 6
In the pen, mix all veggies, and then add egg mixture all over it. Close the lid and cook on low heat until just turns solid (you don’t want to overcook it). Optionally, can flip parts of the omelet (but it will likely to break, so up to you; it will be cooked through faster though).
