Instructions
Step 1
Chop the spinach very finely, and cube and marinate the paneer

Heat oil in a pan and add the garlic, followed by the spinach and cook until "reduced" and fragrant (about 10 minutes), add turmeric, and remove from the pan

Add the oil to a pan, bring to temperature, and fry off the paneer until crisp and golden brown. Remove from the pan

Step 4
Over medium-high heat, add the cumin, followed by diced onion to the paneer oil. Add the salt and bayleaves and cook until caramelised.
Step 5
And the garlic and fry off for a further few minutes (until gold).
Step 6
After ~12 minutes total of cooking the onions, add the spice mix, mix in, and add the spinach.
Step 7
Cook for a good few minutes, before stirring in the paneer and cook for another 5
Step 8
Add tomato wedges, heat, and add the gravy
Step 9
Cook until done
