Step 1
Heat oven at 100°C. Peel pineapple and cut into thin 2mm slices. Tap dry with paper towel to rid of excess syrup. Place baking paper on baking tray and arrange pineapple slices on baking paper. Place in oven for 15 minutes. Turn slices and insert back into oven for 15 minutes. Pineapple slices should at this stage be almost dry. Remove from oven and insert each slice into muffin holes. Reduce oven temperature to 50°C and place muffin pans with pineapple until dry approximately 45 minutes or until dry. Optional: Dilute coloring gel with little water and dip pineapple rings into solution. Dab with paper towel and dry in oven as above.
