Roast the eggplants

Cook the Tofu in a Pan for some minutes (I used a tomato flavoured one)

Cut the tomatoes

Smash the avocado and make guacamole by adding some salt, lime, black pepper, scallion and the tomatoes

Spread the Guacamole onto the wrap, add the tofu cut in little cubes, some pieces of eggplant and if you want warm the wrap on a hot pan
