Step 1
1) Sautee all veggies in butter. 2) add wine and cook 3 minutes. 3) add chicken stock and bring to a boil. 4) remove from heat and let cool. 5) in separate skillet, remove skin from sausage and cook until brown, remove from heat, then cool and mince in blender. 6) in large bowl incorporate all ingredients and mix well. 7) Clean and slice turkey breast, season with salt & pepper to taste. 8) stuff breast with 1/4 of the mixture, ( stuffing for 4), then truss. 9) place on oven rack in pan, roast on low 220 until internal temperature reaches 165. Slice and serve with your choice of pan jus or gravy.
