Healthier Zuppa Toscano (Instant Pot)
Copy from another reciped but changed a few things to make it a little healthier. No heavy cream for one, Instead use a head of cauliflower.

Step 1
Cook onion in instant pot till slightly softened
add sausage and cook through adding garlic in the last few minutes of cooking.
slowing add broth scraping the bottom of the pot to avoid a burn warning. Add remaining broth, diced potatoes, and oregeno. stir and set trimmed head of cauliflower on top.
Step 2
high for 10 minutes. Quick release. Remove cauliflower and puree in blender. Add Kale to soup and pour cauliflower in. Stir and set lid back on to allow kale to wilt a bit
