BALSAMIC VINEGAR:
2 quartsdark balsamic vinegar
3 ozfresh thyme
leaves picked
¼ cupfresh lemon juice
2 cupsdijon mustard
4 tspsgarlic powder
4 tspskosher salt
2 tbspsground black pepper
VINAIGRETTE:
Instructions
Step 1
Combine ingredients in a 16-quart Cambro, and mix with a burr blender until fully incorporated.
Step 2
Let it sit for 2 mins.
VINAIGRETTE:
Step 3
While burr blender is still on, slowly pour the Canola oil until the dressing thickens. Then pour the remaining canola oil to make the vinaigrette.
Step 4
Add enough cold water to loosen and make the dressing pourable.
SUBSTITUTE FRESH GARLIC CLOVES:
Step 5
Substitute 4 tsps garlic powder for 3 large garlic cloves.
