Instructions
Step 1
Thaw for 3 days in the fridge before meal day.
Step 2
Rub in seasonings the night before and leave on a cookie sheet above another rack so it isn't resting in its own juices. (uncovered)
Step 3
Cook in the oven at the lowest temp the oven will go. Cook until the meat is 130⁰ (will take most of the day, start at 9 am)
Step 4
After the meat is at 130⁰, take it out of the oven and cover it until 30 minutes before ready to eat.
Step 5
30 before you eat, turn oven on to highest available temp and cook for 10 more minutes to sear the skin.
Step 6
After searing the skin. Take the meat out of the oven for a second time. Cut it up to be served and eat.
