Pea frittata wraps

A delicious picnic wrap made from a thin frittata with peas and edamame beans. Add salad leaves if you like and eat hot as soon as it’s cooked or cool in a picnic.

Instructions

Step 1
Place the frozen peas and beans together in a bowl and pour on enough boiling water to just cover them.
Step 2
Heat the olive oil in a non-stick frying pan.
Step 3
Drain the peas and edamame beans and squash the edamame beans a little. Add the beaten eggs and chopped spring onion to the peas and beans. Mix these together and carefully pout into the hot frying pan with the oil.
Step 4
Stir the egg mixture around the pan for a minute until it starts to set, then turn the heat to a low setting and cook for a further minute then stir around again so that any uncooked mixture can be incorporated.
Step 5
Cook for a further 2 minutes until all of the egg has cooked through. If the top of the mixture is still uncooked, place the pan under a hot grill for a few seconds to set it.
Step 6
Once cooked, tip the frittata onto a plate and leave to cool.
Step 7
Once the frittata is cooled place it on the wrap and sprinkle on the fresh coriander. Add rocket leaves.
Step 8
Wrap up the frittata and cut in two pieces to place in a picnic or serve.
