Tomato Sauce 2.0

This homemade multi purpose tomato sauce is perfect for pizza or pasta, or even just to dip garlic bread.

Instructions

Step 1
1. Heat olive oil in a saucepan. Add chopped onions.
Step 2
2. Once the onions become softer and start to brown (very slightly), add the anchovies. Do not drain them.
Step 3
3. Using a rubber spatula or wooden spoon, crush the anchovies and sauté them with the onions until they are mostly dissolved.

4. Add the tomato paste and sauté for another minute or two.
Step 5
5. Add the red wine and stir everything to combine.
Step 6
6. Add the dry seasonings, and the crushed tomatoes. Stir.
Step 7
7. Add the water, one cup at a time. Stir.
Step 8
8. Cover and let simmer on low heat for a couple hours, until the sauce has thickened to the desired consistency.
Step 9
9. Allow to cool down to room temperature before storing it in an airtight container. A larger mason jar works well.
