Instructions

Step 1
Pour small amount of boiling water into the pecorino romano and mix until you get a mashed potato consistency, set aside.
Step 2
Boil spaghetti in salted water
Step 3
Toast the black pepper in a pan over medium heat; add pasta water (3/4 cup) and the butter and stir together
Step 4
When pasta is ~60% done, transfer directly from pot into the pan with the pepper (DO NOT DRAIN PASTA WATER).
Step 5
Continue cookin gover medium heat until pasta is almost done
Step 6
Add more pasta water as needed as the spaghetti continues to cook and absorb the liquid
Step 7
Turn off the heat and put a c ouple dollops of the pecorino romano mixture in the pan; pour a little pasta water (if needed) over the cheese and mix otgether until the sauce is thick and glossy
Step 8
Serve with fresh pepper on top.
