Marinade
1 tsppaprika
1 tsponion powder
1 tspgarlic powder
1 tspcelery salt
500mlbuttermilk
1egg
beaten
150mlwater
ice

Instructions
Step 1
Mix marinade, leaving egg and ice water to the side
Step 2
Add chicken to marinade and leave for 4 hours min but ideally 24
Step 3
Once chicken marinaded, combine coating in a large bowl
Step 4
Lay chicken on kitchen roll and pat dry to remove excess marinade
Step 5
To remaining marinade in bowl add ice water and egg. Whisk until combined
Step 6
Dredge chicken in marinade, coating then repeat. Fry each piece for 3-4 mins at 145c.
Step 7
Set chicken aside on a wire rack to remove excess oil.
Step 8
Chicken can now by finished by:
- frying 1 minute at 180c
- oven for 10 mins at 180c fan
