Instructions

Step 1
1. Heat the olive oil in a large skillet over medium- high heat. Add the onion and garlic and sauté until translucent. Brown ground beef and then add taco seasoning packet.

2. Add 1/2 can of refried beans and mix well until fully combined. Set aside to cool a bit.
Step 3
3. To assemble, add two tablespoons of filling to the bottom third of each raw tortilla and top with a heaping tablespoon cheese. Tightly roll up tortillas.

Step 4
4. Heat olive oil in a large nonstick skillet over medium heat (optional for extra crispiness). Working in batches, add taquitos and cook, until golden brown on all sides, rotating as needed. Top with pico, cheese and serve with guacamole.
