Instructions
Step 1
Peal and wash your potatoes then cut the edges to form a big rectangle.
Step 2
Slice your potato rectangle into 3 rectangles (1.5cm thick).
Step 3
Place one chopstick on each side (the long one) of your potato rectangle to ensure you won’t slice it all the way through.
Step 4
Make thin cuts horizontally, flip it on the other side and cut thin cuts diagonally. You should have formed an accordion.
Step 5
Boil your accordion potatoes in some salted water with a teaspoon of baking soda for exactly 3 mins, drain and set aside.
Step 6
In the meantime, mix olive oil with some crushed garlic, salt and paprika.
Step 7
Place your boiled accordion potatoes on a baking tray lined with parchment paper and spread some of your olive oil mix on each side.
Step 8
Season with chilli flakes and black pepper and bake for 20 mins (200C/390F).
Step 9
Flip your potatoes on the other side, and bake for 10 more mins. If they are not crispy enough, just bake them a tiny bit longer.
Step 10
Serve with some chopped parsley on top. Buon appetito!
