Instructions
Step 1
In a bowl, mix your Pecorino cheese with a drop of pasta water to create a paste.
Step 2
Sizzle your guanciale (or bacon) in a pan over medium heat for about 5 mins or until crispy. When it’s ready, remove form the pan and set aside.
Step 3
In the meanwhile, boil your pasta until al dente (2-3 mins before its cooking time), then add it to your greasy pan.
Step 4
Add a ladleful of pasta water to finish cooking the pasta in the pan, stirring occasionally.
Step 5
Turn the heat off and add your cheese paste and stir until it melts. If needed, add some pasta water to make it creamier.
Step 6
Add your crispy guanciale and black pepper and enjoy. Buon appetito!
