Instructions
Step 1
Remove shrimp's head and skin and put them in a saucepan.
Step 2
Remove shrimp's vein, and set aside.
Step 3
Add olive oil to the saucepan medium-high heat, and sautee the head and shell. Smash the head, and sautee.
Step 4
Add celery, onion, parsley, cook for about 5 minutes.
Step 5
Add wine, water, whole tomato, and smash tomatoes—Cook for about 5 minutes.
Step 6
Put them into a large bowl, and set them aside.
Step 7
See the package instruction, and cook pasta one minute shorter. (If it's cooking 12 minutes, then cook 11 minutes). Save the cooking water for the sauce.
Step 8
In a large skillet medium-high heat, add olive oil. Add garlic and saute for about 1 minute, then remove it from the oil.
Step 9
Add cubed tomato, and sautee for about 3 minutes until browned.
Step 10
Strain the shrimp broth into the tomatoes, add 1 cup pasta cooking water, salt, pepper, and parmesan cheese. Cook until it gets saucy.
Step 11
Add cooked pasta to the sauce, coat the pasta with the sauce, add shrimp, and cook until shrimp is cooked.
Step 12
Serve with chopped parsley.
