Instructions
Step 1
Salt the slices of aubergine and leave for a few mins to draw out the moisture. Then pat dry
Step 2
Fry aubergine until golden. Alternatively in air fryer (15 mins) or oven
Step 3
Fry onions in oil until soft
Step 4
Add tomatoes chili and turmeric and fry for 5 mins more. Salt for taste. Add lid
Step 5
Add aubergine and cook for 10 more minutes
Step 6
Combine yogurt and minced garlic
Step 7
Serve with pitta and mint
