Toddler lentil banana muffins
These muffins are dense & filling. Full of protein and omegas, fibre & not too much sugar. The oil is optional.

Instructions
Step 1
Soak red lentils overnight or at least a few hours. Drain and food process or blend until they become a paste. Mix water and flax and allow to thicken for a few minutes. Combine all ingredients* and spoon into a greased mini muffin pan. Bake at 350°F for approx 10-12 minutes until a toothpick comes out clean. *the oil is optional, the recipe will work either way

This is a kiddo HIT!! They split a big muffin for breakfast, I can pack some in their boxes for daycare, and mama can also grab a few without feeling badly about the contents … because this is a ROCKSTAR recipe! I’ve already shared it with my whole family, loads of friends, and several colleagues.
